So, what do you do with the leftovers? Well, I made fried potato cakes! I added:
1 egg, beaten
- a handful of shredded cheddar (a cup, maybe)
- a heaping spoonful of sour cream (1/4 cup-ish)
- salt, pepper, garlic salt, paprika and onion salt
- enough flour to hold it all together
I mixed all the ingredients, sprayed a little cooking spray on the griddle and cook until brown on one side, flipped and cooked until brown on the other side. Yum!
Much better than trying to reheat mashed potatoes.

ReplyDeleteMy grandma used to make potato pancakes with leftover mashed potatoes but these look much tastier. I might try it if we ever have any leftovers (not likely with the 12 yo garbage disposal I'm feeding).

ReplyDeleteNot at all, Jeannie. I just used it because we all like sour cream. I was going for kind of a "loaded fried potato cake" kind of thing. ;-)

yummy!! I make potato cakes but I don't put sour cream or cheese in them. I put onion in them. However, my girls will add a slice of cheese on the top of theirs on their plate. I may have to try this recipe. Thanks for sharing.
