Works for Me Wednesday: Best Summer Recipes

This week's Works for Me Wednesday post is a themed edition: Best Summer Recipes. I've got two favorites that always make me think of summertime.

Strawberry Pretzel Salad

2 cups broken pretzels
1 1/2 sticks melted butter or margarine
8 ounce package of cream cheese
1 cup sugar
1 large box of strawberry Jell-O
1 medium tub of Cool-Whip
2 - 10 ounce packages of frozen strawberries, mostly thawed


Line a 9 X 12 baking dish with pretzels. Pour margarine over pretzel layer, then, sprinkle with 3 tablespoons of sugar. Bake at 400 degrees (F) for about 8 minutes. Remove from oven and let cool.

While the pretzel layer is cooling, prepare Jell-O with two cups of boiling water. Mix with strawberries and refrigerate for about 2 hours (until lightly set). Mix cream cheese and remaining sugar. Fold in Cool-Whip. Spread cream cheese mixture over pretzel layer. Spread Jell-O over cream cheese layer. Refrigerate until Jell-O is set. Keep refrigerated and serve cold. Yum!


The other recipe is much simpler and quite tasty, as well as being weight-loss friendly.


Pineapple Angel Food Cake


1 box Angel Food Cake mix
1 can crushed pineapple


Mix crushed pineapple with angel food cake mix. Pour into a 9 X 13 baking pan. Bake at 350 degrees (F) for about 10-30 minutes (until firm and browned). Serve with Cool-Whip.


That's it! Simple! However, to really add some festive, July 4th fun, spread the Cool-Whip over the cake (still in the pan, but cooled) and top with blueberries and sliced strawberries, creating a flag design with the berries.

  1. Kris! I was just looking for the recipe for the Strawberry Pretzel salad today. I just didn't know what it was called. I knew there was more than one reason that I follow your blog! :)

  3. I made the strawberry pretzel salad last year for the 4th. I think the whole pretzel - jello thing scared people because it didn't go over well. Oh well...more for me. :)

  4. I can so relate, Lindsey. I got the recipe from my mom and I was such a skeptic the first time she made it. Pretzels and strawberries sound disgusting, but, as I'm sure you know, it's so good!

  5. Oh, that pineapple angel food cake looks dangerous. I LOVE pineapple. I ate a whole pineapple upside down cake by myself in 3 days. I'm not exaggerating.

  7. I couldn't help but smile when I scrolled down and saw the "salad" recipe! I guess I've been living in Japan for too long. I had forgotten how broad the term "salad" can be in the US! That does sound wonderful, but I'm sure that my Japanese husband would love to have it served as a dessert;o).

    An American friend that used to live here used to make a recipe like that, but with bluberry pie filling in place of the strawberries/jello. It is so yummy!
