My family is kind of picky when it comes to soups. There aren’t many that we like. However, when the weather gets cooler, nothing sounds better than a warm bowl of my favorite comfort food soups. I’ve been making them more often lately and pairing them with really good grilled cheese sandwiches or ham and cheese sliders so that the people who aren’t crazy about soup will have something to fill up on.

10 soup recipes perfect for cold weather days

Because it’s been perfect soup weather in my part of the country lately, I thought I’d share my favorite soup recipes with you.

Chili

Chili is the most frequently served soup at our house. Megan is the only one who won’t eat it at all, so I usually make hot dogs to go with it. Brianna uses it to make a taco salad. The rest of us just enjoy the chili.

1 lb ground beef
1/2 onion, chopped
1 clove garlic
1 T flour
2 T chili powder
1 T taco seasoning
1 t salt
1/2 t ground cumin
1/2 t sugar
1 can diced tomatoes
1 sm can tomato paste
1 can tomato sauce
1 can pinto beans

Brown ground beef with onions and garlic. While beef is browning, mix together seasonings until well-blended. Drain ground beef and add tomatoes, tomato paste, tomato sauce, and pinto beans. Add seasoning and mix until well-blended. Add water to reach desired consistency and simmer for 30 minutes, stirring occasionally.

Broccoli Cheddar

EverybodyCheddarbroccoli cheddar soup. I made it a couple of weeks ago to take to my sister’s and my cousin brought ham and cheese sliders. That soup-and-sandwich pairing ranks right up there with tomato soup and grilled cheese. One word: yum! I love this Panera Bread broccoli cheese soup copycat recipe.

Chicken Gnocchi

Just this weekend, I attempted this Olive Garden chicken gnocchi copycat recipe. It was really good. It’s a favorite of mine and Josh’s.

Tomato Basil

Apparently, I’m all about the copycat recipes, because I love this one for Applebee’s tomato basil soup. Even the picky girls don’t complain about the tomato basil when there’s a really yummy grilled cheese to dip in it.

Here’s how I make my grilled cheese:

1 loaf sliced French or Italian bread
Sharp cheddar slices
Shredded Parmesan, Romano, Asiago blend
Butter

You can probably figure out what to do with it all. It’s the three-cheese blend that makes it, though.

Chicken taco soup

I love, love, love chicken taco soup, but most recipes are too spicy for me. So, when a friend shared this milder recipe, it quickly became my favorite. It gets bonus points for being healthy.

1 rotisserie chicken (or you can do it the hard way and boil a pound of chicken thighs), diced
1 c chopped onion
1 16oz can pinto beans
1 15oz black beans, drained and rinsed
1 c frozen, whole kernel corn
1 8oz can tomato sauce
2 c chicken broth
1 14.5oz can Rotel tomatoes (mild)
1 14.5oz can diced tomatoes (skip this and use 2 cans of Rotel if you like it spicy)
1 packet taco seasoning mix
1 packet Hidden Valley ranch dressing mix

Mix all ingredients together in slow cooker. Cook on low for 8 hours. Top with shredded cheese and sour cream. Serve with tortilla chips, if desired.

Clam chowder

I haven’t had this one in a really long time, but it’s my favorite clam chowder recipe. The red wine vinegar is very important.

Beef stew

I don’t really have a recipe for this one, but I love to make it with leftover roast when I’ve cooked the roast with potatoes and carrots. I toss in green beans, corn, diced tomatoes, tomato sauce, and tomato paste. Yum. It is excellent served with corn muffins.

Loaded potato

The loaded potato soup is probably my very most favorite soup. It freezes well, too.

Veggie Soup

I don’t have a recipe for my veggie soup either. Basically, I do it the same way I do the beef stew, but without the beef and with some chicken broth.

Okay, so I cheated a little. I don’t really have 10 favorite soup recipes. It’s the whole “my family isn’t crazy about soup” thing. So, I was hoping you could help me with #10. Do you have a favorite soup that I haven’t listed here? Would you mind sharing the recipe? I’ve been thinking of trying a black bean soup, so if you’ve got a recipe for that, I’d love to have it, but any favorite soup will do.

Edited to add: I have perfected a black bean soup recipe which rounds out my Top 10 Favorite Soups.

  1. Here is a quick one:
    Hamburger & Veggie Soup
    Brown 1 lb ground sirloin or lean beef, then add 1 can lower sodium beef broth, can of diced fire-roasted tomatoes, can of V-8, 1 pkg. of dry onion soup mix, can of chickpeas, and 1 lb. package of frozen mixed vegetables. (Add some water if you want more “soupy”). Bring to a boil, then reduce heat and simmer for 15 to 30 minutes (until veggies are heated through).

    You can also use sweet Italian sausage in place of the hamburger and throw in some Italian seasoning.

  2. I had received a Rachel Ray’s cookbook. Not being a fan of hers, I put it off for about a year before I decided to see what it had. I’m so glad I did. It’s called Chicken, Chorizo, & Tortilla soup. Delish! FYI – I don’t use a dry chorizo, but the wet chorizo (it gives it an all-around flavor). Just search Food Network for Chicken, Chorizo & Tortilla stoup. It’s really chunky & hearty. Hope you get to try it. You will not regret!

  3. This spinach soup is fabulous, and a family favorite!
    2T olive oil
    10 oz fresh spinach
    2 cloves garlic, minced
    4T butter
    1/2 onion, diced
    1/4C flour
    5C whole milk
    2t salt
    1/4-1/2t cayenne pepper
    4oz grated jack cheese

    Sautée spinach & garlic in oil, 2-3 minutes. Put mixture in blender with 1/4c hot water and pulse until puréed.
    In large pot cook onion in butter until softened. Sprinkle flour over top & stir to combine. Pour in milk & s/p. Cook over medium heat for 5 minutes, stirring constantly. Pour in puréed spinach, then cook until thickened. Top with jack cheese.

    I serve this to guests and everyone loves it. I like it because I can adjust the veggies to what I have on hand and it smells really good when you are cooking it. Hope it works for your family.

    1. Thanks, Barb. I’ll have to put this on my “to try” list. Everybody likes tortellini, but I never do anything with it except boil it and serve it with spaghetti sauce.

  5. My poor family (who LOVE soup and fresh-from-the-oven bread) have only one complaint with my soup making. I DON’T use a recipe, which means when they say, “This is great soup – can we have it again?”, my answer is always, “No!” 🙂

    Every couple of weeks I make Musgo Soup, which is always well-received. You know, everything in the fridge that “mus’ go”.

  6. It’s funny. If you were to ask me if I like soups, I’d probably say “no,” but the truth is there are several I like. I love tomato soup and Broccoli Cheddar. Chili–I’ve never thought of as a soup but I suppose it is! In which case, we have soup all the time!

    1. Yeah, I was probably stretching it a bit including chili and stew, but they’ve got to at least be in the soup family, right?

  7. Cabbage Stew – Don’t let the name scare you. It’s delicious.

    2 pounds ground beef – browned and drained
    2 cans diced tomatoes
    1 can Rotel
    2 cans – Cannelli or Red Bean
    24 oz of V-8 juice
    1 head cabbage – chopped
    2 DRY packages of Italian dressing ( I use Simply Organic but you can use Kraft: 1 Zesty Italian and 1 Italian mixes)

    In pot brown the meat, add in all but the seasonings. Once cabbage is tender, add in dry seasoning packets and simmer 10 minutes. Serve. Simple, easy and delicious!
