Taco Casserole

Tonight’s dinner is an easy, family favorite: Taco Casserole for supper. I like it because it’s relatively quick and everybody likes it.

Taco Casserole

1 lb ground beef
1/2 lb Velveta, cubed
1 pkg taco seasoning mix
1 can diced tomatoes
1/2 c water
1 pkg yellow rice (I used the medium-sized pkg)

Prepare rice according to package directions. While rice is cooking, brown and
drain ground beef. Mix in water and taco seasoning. Mix in tomatoes and
Velveta. Mix togehter with rice and pour into a casserole dish. Bake for 15
minutes at 350.

Great with tortilla chips and sour cream or cheese quesadillas.
