Work for Me Wednesday: Freezer Meals

I’m not really sure why we, as Americans, tend to think that it’s okay to feed our kids things that we ourselves wouldn’t eat…but I’m one of those folks who does things like that. On “chicken nugget and macaroni and cheese” day, I’m having something else!

For the times when this occurs, I rely on my freezer meals.

I have a stack of those great #2 Rubbermaid square containers that hold just the right amount of food for a meal. When we have left-overs — or, sometimes, “planned-overs” — I fill up a container or two or three and pop them in the freezer. Then, when it’s time for a quick meal, something different than the rest of the family is having, or my husband needs an emergency meal for lunch, I can just make a selection from some delicious, home-cooked, single-serving meals in my freezer.

Some days, we even have “freezer meal day” wherein everyone gets to make a choice from the freezer. The kids like the flexibility of choosing which meal they want and everyone gets a quick, tasty, healthy lunch.

  1. This is SUCH a great idea!!! I try to have leftovers the next day, but all too ofter they get icky after days alone in the fridge.

  2. We do this too. Pretty much anything that is leftover goes in the freezer. I’m always afraid things will get left in the fridge and spoil, and be wasted, so everything goes in the freezer. My hubby takes one for lunch everyday.
