Meal Plan Monday 12.07.09

This week, I have utilized Gina’s Weight Watchers Recipes to help fill up my weekly meal plans with healthful, low-fat meals. I enjoyed every meal that I made from her site last week.  The kids weren’t too crazy about the Chicken Chili, but I loved it with the modifications I made (so that it wasn’t so spicy) and had it for lunch a couple of days.  The only other complaint was about the Shrimp Fried Rice — next time I need to double the recipe for my crew!  Most of the lunch ideas came from The Biggest Loser 30-Day Jump Start.

Now, on to this week’s meal plans:

Sunday

Breakfast:  cereal
Lunch:  Bacon sandwiches (Yes, real bacon…but on whole wheat bread using light mayo.)
Dinner:  Beef Stir-fry

Monday
Breakfast: Ham and Cheese Breakfast Melt (30-Day Jump Start, p. 51)
Lunch:  Greek Salad (30-Day Jump Start, p. 86)
DinnerBaked chicken with Dijon and lime w/steamed broccoli and carrots and cauliflower mashed potatoes

Tuesday

Breakfast: Banana Nut Oatmeal (30-Day Jump Start, p. 61)
Lunch: pita bread pizza
DinnerBroiled Tilapia w/spinach and roasted red potatoes

Wednesday

Breakfast:  Strawberry Smoothie (30-Day Jump Start, p. 100) w/a hard-boiled egg
Lunch:  Tuna Melts (30-Day Jump Start, p. 79)
DinnerGarlic-Lime Marinated Pork Chops, w/corn-on-the cob, rice and salad

Thursday

Breakfast:  Oatmeal (30-Day Jump Start, p. 79)
Lunch:  Leftovers
Dinner:  Family Night @ my sister’s.  It’s Josh’s 10th birthday, so I’ll be taking a real, full-fat, honest-to-Pete birthday cake and enjoying a guilt-free single, small slice.  😉

Friday

Breakfast:  Cereal and a boiled egg
Lunch:  leftovers
DinnerVeggie Lasagna w/salad

Saturday

Brunch:  Eggs, bacon, and hash browns
DinnerPan-seared shrimp w/roasted red potatoes and salad
