Recipes: Low-Fat Pineapple Angel Food Cake

If you’ve ever done Weight Watchers, you’ve probably learned the super-easy, low-fat cake recipe. If you haven’t, I’ll let you in on the secret. You can make a tasty, low-fat, super-easy cake or brownies by mixing one box of cake mix (any flavor) or one box of brownie mix with 8-10 ounces of diet soda — usually Diet Coke for dark cakes or Diet Sprite for lighter cakes.

Another low-fat variation, though, has become a favorite with friends and family…and nobody cares that it’s low-fat. It’s the pineapple angel food cake and it’s incredibly simple. You just mix together this:

Yep, it’s that simple. An angel food cake mix and a can of crushed pineapple (in juice, not heavy syrup). Just mix them together and bake at 350 degrees for 20-30 minutes. It’s really good served with some low-fat Cool-Whip on top.

  1. This sounds fabulous and just may be my V-Day treat! So you just mix the can and the mix…nothing else? Awesome…I love easy (and I love Angel Food Cake AND Pineapple…)

  2. Cake mix and Diet Coke? Seriously, I had to read that three times to be sure I had read it correctly. That sounds um… interesting. I just googled it and am surprised at the rave reviews! Regardless, I think I'll have the Angel pineapple instead. 😀

  3. This sounds so good and a good alternative to chocolate treats. Speaking of which, the Hungry Girl mixes a can of pumpkin with a chocolate or devil's food cake mix to make brownie/muffins. They look really goofy but taste great! My kids eat them all up before I can save any for me lol. I put your recipe in my Living Cookbook and it calculates the calories at only 140 for 1/12 of the cake. Can't wait to try it!

    1. For this recipe it needs to be angel food cake. There are others you can do with any cake mix and a can of soda. Just mix those two ingredients and you’ve got a low-fat cake.
